What to take out of an archive, and where to root it.

Defaults to everything, unstripped — the whole archive, exactly as stored.

This exists because vendoring wants a slice, not a tree. The LLVM tarball holds 187,392 members inside a single `llvm-project-<sha>/` directory, and the build needs roughly 11,000 of them. Extracting the rest costs about a gigabyte of disk and the time to write it, for files nothing will ever open.
